How To Cook A Fresh Live Lobster
November 132011
Some people are intimidated by the thought of cooking fresh live lobster. It is not as hard as you think, and it makes a huge difference in the freshness and quality of your lobster dish. It is always best to cook the lobster, the same day you purchase it at the market.
You can start by going to your local grocery store that sells live lobsters in a tank of water. Live lobsters should be very active, and their tale should curl, when you pick it up. This is a good sign that the lobster is healthy, and safe to eat.
Once you get your lobster home, be sure to put it in the refrigerator in a styrofoam container with no lid, and cover with a clean damp towel. Lobsters breathe through gills, so the gills must remain moist, to keep it alive. Do not keep a live lobster in water at home. This will ensure that he does not drown before preparing him to cook.
One of the most common and easiest ways to cook a live lobster is to boil in a large pot of water. You will need a large pot, timer, salt, and large tongs. Use enough water to cover the lobster. Bring the water to a rolling boil, and add 1 tablespoon of salt per quarter of water. The salt must be used to maintain the flavor of the meat.
Next, use your tongs, and carefully put the lobster in the water, claws first. You may add chopped vegetables such as parsley, onions, garlic, celery and carrots. The vegetables help make a nice lobster broth, that can be saved for future recipes.
Wait for the water to boil again before timing it. Once it has come to a second boil, begin to time how long the lobster cooks.
A 2 pound lobster takes 13 minutes to boil. If you choose to get a 3 pound lobster, it will take 16 minutes to boil.
